Preparing the Figs

Roasting the Figs

Preheat the oven to 375°F (190°C). Cut the figs in half and place them cut side up in a baking dish. Drizzle honey and port wine over the figs, and add the cinnamon stick. Roast in the oven for 20-25 minutes or until the figs are tender and caramelized.

Melting the Chocolate

In a heatproof bowl, melt the white chocolate over a double boiler until smooth. Remove from heat and let it cool slightly.

Whipping the Cream

In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.

Beating the Egg Whites

In another bowl, beat the egg whites with granulated sugar until stiff peaks form.

Combining Ingredients

Gently fold the melted white chocolate into the whipped cream. Then, fold in the beaten egg whites until fully combined and smooth.

Chilling the Mousse

Transfer the mousse into individual serving cups or a large dish and chill in the refrigerator for at least 2 hours before serving.

Making the Brown Butter Almond Crumb

Browning the Butter

In a saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma. Be careful not to burn it.

Combining Ingredients

In a mixing bowl, combine chopped almonds, browned butter, all-purpose flour, and brown sugar. Mix until crumbly.

Baking the Crumb

Spread the mixture on a baking sheet and bake at 350°F (175°C) for about 10-12 minutes, or until golden brown. Let it cool.
