Method
Caramelized Apples
Prepare the Apples
Peel, core, and slice the apples into thin wedges.
Cook the Apples
In a large skillet, melt the butter over medium heat. Add the apple wedges, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized (about 10-15 minutes). Stir in the vanilla extract before removing from heat.
Apple Cider Caramel
Make the Caramel
In a saucepan, bring the apple cider to a boil over medium-high heat. Let it reduce to about 1/4 cup, approximately 15 minutes.
Combine Ingredients
In another saucepan, combine the granulated sugar and 1/4 cup of water. Cook over medium heat until the sugar dissolves and turns golden brown.
Finish the Caramel
Remove the pan from heat and carefully whisk in the heavy cream and the reduced apple cider. Add a pinch of salt and stir until smooth. Allow it to cool slightly.
Walnut Florentine
Prepare the Mixture
Preheat the oven to 350°F (175°C). In a saucepan, melt the butter over low heat. Add the granulated sugar and heavy cream, stirring until combined.
Combine with Walnuts
Stir in the chopped walnuts and flour until the mixture is well combined.
Bake the Florentines
Drop spoonfuls of the mixture onto a lined baking sheet, leaving space between each. Bake for 10-12 minutes or until golden brown. Let cool before removing from the baking sheet.
