Wagyu Beef Tartare

    Prepare the Beef

    Finely dice the Wagyu beef tenderloin and place it in a mixing bowl.

    Mix the Ingredients

    Add the egg yolk, Dijon mustard, capers, shallots, parsley, olive oil, salt, and black pepper to the bowl with the beef. Gently mix until combined.

    Taste and Adjust

    Taste the tartare and adjust seasoning if necessary. Set aside in the refrigerator to chill while preparing the chips and ssamjang.

Black Lime Spiced Taro Chips

    Prepare the Taro

    Peel and thinly slice the taro root using a mandoline or sharp knife. Rinse the slices under cold water and pat dry with a towel.

    Heat the Oil

    In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Fry the taro slices in batches until they are golden and crispy, about 3-5 minutes. Remove from the oil and drain on paper towels.

    Season the Chips

    While the chips are still warm, sprinkle with black lime powder and salt. Toss gently to coat evenly.

Ssamjang

    Combine Ingredients

    In a small bowl, combine the doenjang, gochujang, sesame oil, minced garlic, green onion, and sugar. Mix until well combined.

    Adjust to Taste

    Taste the ssamjang and adjust sweetness or spiciness according to preference.
