Method

Marinating the Steak

    Prepare the Marinade

    In a bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Mix well.

    Marinate the Steak

    Place the hanger steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Preparing the Fries

    Cut the Potatoes

    Peel and cut the potatoes into thin strips, about 1/4 inch thick.

    Fry the Potatoes

    In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Making the Herb Salad

    Prepare the Salad

    In a bowl, combine the mixed herbs, olive oil, lemon juice, salt, and black pepper. Toss to combine and set aside.

Curing the Onions

    Cure the Onions

    Thinly slice the red onion and combine it with sherry vinegar, water, sugar, and salt in a bowl. Let it sit for at least 30 minutes to cure.

Making the Truffled Veal Jus

    Prepare the Jus

    In a saucepan, bring veal stock to a simmer. Stir in truffle oil and season with salt and black pepper to taste. Keep warm until ready to serve.

Cooking the Steak

    Cook the Steak

    Remove the steak from the marinade and let it come to room temperature. Preheat a grill or skillet over high heat. Cook the steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.
