Preparation of Salad Base

Wash and Prepare Greens
Rinse the mixed seasonal greens under cold water. Pat them dry with a clean kitchen towel or use a salad spinner. Tear any larger leaves into bite-sized pieces.

Cut Vegetables
Halve the cherry tomatoes and slice the cucumber into thin rounds. Set aside.
Making Herbed Croutons

Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Bread
Cut the day-old bread into small cubes (about 1-inch pieces). Place them in a large mixing bowl.

Season and Toss
In a small bowl, mix together the olive oil, dried Italian herbs, garlic powder, and salt. Pour this mixture over the bread cubes and toss until all pieces are evenly coated.

Bake Croutons
Spread the seasoned bread cubes in a single layer on a baking sheet. Bake in the preheated oven for about 10-15 minutes, or until golden brown and crispy, tossing halfway through. Remove from oven and let cool.
Making Green Goddess Dressing

Combine Ingredients
In a mixing bowl, combine mayonnaise, Greek yogurt, chopped parsley, chopped chives, lemon juice, minced garlic, salt, and black pepper.

Blend Dressing
Use a whisk or a hand blender to mix all the ingredients until smooth and creamy. Adjust seasoning with salt and pepper to taste.
Assembling the Salad

Combine Salad Ingredients
In a large salad bowl, combine the prepared mixed greens, halved cherry tomatoes, and sliced cucumber.

Add Croutons and Dressing
Top the salad with the herbed croutons and drizzle with the green goddess dressing.

Gently toss the salad until everything is well combined. Serve immediately.
