Preparation

  1. 1

    Prepare the Shrimp

In a large bowl, combine 1 pound of shrimp (peeled and deveined). If you prefer, you can use pre-cooked shrimp for convenience.

  2. 2

    Add Lime Juice

Pour 4 tablespoons of fresh lime juice over the shrimp, ensuring they are thoroughly coated. Cover the bowl and refrigerate for about 30 minutes, allowing the shrimp to 'cook' in the acidity of the lime juice.

Mixing Ingredients

  1. 3

    Chop Vegetables

While the shrimp marinates, chop 2 avocados, 1 jalapeño (remove seeds for less heat), and 0.5 cup of red onion into small pieces.

  2. 4

    Combine with Corn

Add 1 cup of corn (fresh, canned, or frozen and thawed) to the chopped vegetables, and mix well.

Final Assembly

  1. 5

    Combine Everything

Once the shrimp have marinated, drain any excess lime juice. Add the shrimp to the vegetable mixture and gently fold together.

  2. 6

    Season with Tajín

Sprinkle 2 teaspoons of Tajín seasoning over the ceviche and mix well to incorporate all flavors.

  3. 7

    Serve

Serve the ceviche chilled, garnished with extra lime wedges if desired.
