Brioche Dough

    Activate Yeast

    In a small bowl, warm 1 cup of milk until it's slightly warm to the touch. Stir in 1 tablespoon of sugar and the active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dry Ingredients

    In a large mixing bowl, combine 4 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of fennel pollen. Whisk together until well mixed.

    Combine Mixtures

    Make a well in the center of the dry ingredients and add the frothy yeast mixture, 3 large eggs, and 1 cup of softened unsalted butter. Mix until it forms a smooth dough.

    Incorporate Herbs

    Fold in 1 tablespoon of chopped fresh chives into the dough until evenly distributed.

    First Rise

    Cover the bowl with a damp cloth and let it rise in a warm place for about 1-2 hours, or until the dough has doubled in size.

    Shape Beignets

    Once risen, punch down the dough and roll it out on a floured surface to about 1/2 inch thickness. Cut into squares or circles.

    Second Rise

    Place the cut shapes on a baking sheet lined with parchment paper. Cover lightly and let rise again for about 30-45 minutes.

    Fry Beignets

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry beignets in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Chive Cream

    Prepare Cream Cheese

    In a medium bowl, beat 8 ounces of cream cheese until smooth.

    Mix Ingredients

    Add 1 cup of sour cream, 2 tablespoons of chopped fresh chives, and 1 teaspoon of lemon juice to the cream cheese. Mix until well combined and smooth. Adjust salt to taste.

Fig Jam

    Prepare Figs

    In a saucepan, combine 2 cups of dried figs and 1 cup of water. Bring to a simmer over medium heat.

    Cook Jam

    Let the figs simmer for about 15-20 minutes, or until they are soft. Remove from heat and let cool slightly.

    Blend and Sweeten

    Transfer the figs and any remaining liquid to a blender. Add 1 tablespoon of sugar and 1 tablespoon of lemon juice. Blend until smooth.
