Method

Steak Preparation

    Prepare the Porcini Rub

    Grind the dried porcini mushrooms in a spice grinder or food processor until fine. Mix with salt and black pepper.

    Rub the Steak

    Coat the strip steaks with olive oil and generously rub the porcini mixture all over the steak. Let it rest at room temperature for about 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over high heat. Cook the steaks for about 4-5 minutes per side for medium-rare, adjusting time based on desired doneness. Let rest before serving.

Mint Potato Piave Preparation

    Cook the Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash the Potatoes

    Peel the potatoes and mash them in a bowl. Add the piave cheese, butter, fresh mint, and salt. Mix until well combined and creamy.

Saba-Glazed Maitake Preparation

    Prepare the Maitake

    Clean the maitake mushrooms and tear them into smaller pieces.

    Sauté the Mushrooms

    Heat olive oil in a skillet over medium heat. Add the maitake mushrooms, sautéing until golden brown, about 5-7 minutes.

    Glaze with Saba

    Drizzle the saba over the cooked mushrooms and season with salt and pepper. Toss to coat and cook for an additional 2 minutes.

Mushroom Sabayon Preparation

    Sauté the Mixed Mushrooms

    In a skillet, sauté mixed mushrooms in a bit of olive oil until softened and browned. Set aside.

    Prepare the Sabayon

    In a heatproof bowl, whisk together the eggs, white wine, and a pinch of salt. Place over a pot of simmering water, whisking constantly until thickened.

    Combine and Serve

    Fold the sautéed mushrooms into the sabayon. Season with salt and pepper, and serve warm over the steak.

Ricotta Salata Preparation

    Prepare the Ricotta Salata

    Crumb the ricotta salata cheese and set aside for serving over the finished dish.
