Preparation of Octopus

    Clean the Octopus

    Rinse the octopus under cold water to remove any impurities. Remove the beak and innards if not already done by your fishmonger.

    Tenderize the Octopus

    Using a meat mallet, gently pound the octopus to tenderize the flesh. This helps to achieve a more tender texture after grilling.

    Marinate the Octopus

    In a bowl, mix 2 tablespoons of olive oil, the juice of the lemon, minced garlic, salt, and black pepper. Add the octopus to the marinade, ensuring it is fully coated. Let marinate for at least 30 minutes.

Grilling the Octopus

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Octopus

    Place the octopus on the grill and cook for about 3-4 minutes per side, or until it is charred and cooked through. Baste with remaining marinade while grilling.

    Once grilled, remove the octopus from the grill and let it rest for 5 minutes before slicing.

Preparation of Sauce

    In a bowl, whisk together 4 tablespoons of olive oil, 2 tablespoons of red wine vinegar, chopped parsley, minced garlic, paprika, and chili flakes. Adjust seasoning with salt to taste.

Serving

    Slice the grilled octopus into bite-sized pieces and place them on a serving platter. Drizzle the prepared sauce over the top and garnish with additional parsley if desired. Serve warm.
