Method

Hummus

    Prepare Chickpeas

    If using canned chickpeas, drain and rinse them. If using dried chickpeas, soak them overnight and cook until tender.

    Blend Ingredients

    In a food processor, combine the chickpeas, tahini, garlic, olive oil, lemon juice, water, salt, and cumin. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add more water as needed until you reach your desired consistency.

    Serve

    Transfer the hummus to a bowl, drizzle with olive oil, and serve with pita crisps.

Babaganoush

    Roast Eggplant

    Preheat oven to 400°F (200°C). Prick the eggplant with a fork and place it on a baking sheet. Roast for 30-40 minutes until soft.

    Scoop and Blend

    Once cooled, scoop out the flesh of the eggplant and place it in a food processor. Add tahini, garlic, lemon juice, olive oil, salt, and smoked paprika.

    Blend Until Smooth

    Blend until smooth and creamy, adjusting seasoning to taste.

    Serve

    Transfer to a bowl and serve with pita crisps.

Pickled Vegetables

    Prepare Vegetables

    Slice carrots and cucumbers into thin rounds. Slice the red onion into rings.

    Make Pickling Brine

    In a pot, combine white vinegar, water, sugar, salt, and black peppercorns. Bring to a boil, then remove from heat.

    Pickle the Vegetables

    Place the sliced vegetables in a clean jar and pour the hot brine over them. Let it cool before sealing.

    Refrigerate for at least 2 hours before serving for best flavor.

Whipped Feta

    Blend Ingredients

    In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, and black pepper.

    Whip Until Smooth

    Blend until the mixture is smooth and creamy.

    Serve

    Transfer to a serving dish and drizzle with olive oil if desired.

Pita Crisps

    Preheat Oven

    Preheat oven to 375°F (190°C).

    Prepare Pita Bread

    Cut pita bread into triangles and place them on a baking sheet.

    Season and Bake

    Drizzle with olive oil, sprinkle garlic powder and salt. Bake for 10-12 minutes until crisp and golden.

    Let the pita crisps cool slightly before serving with hummus and babaganoush.
