Method
Hummus

Prepare Chickpeas
If using canned chickpeas, drain and rinse them. If using dried chickpeas, soak them overnight and cook until tender.

Adjust Consistency
If the hummus is too thick, add more water as needed until you reach your desired consistency.

Roast Eggplant
Preheat oven to 400°F (200°C). Prick the eggplant with a fork and place it on a baking sheet. Roast for 30-40 minutes until soft.

Scoop and Blend
Once cooled, scoop out the flesh of the eggplant and place it in a food processor. Add tahini, garlic, lemon juice, olive oil, salt, and smoked paprika.

Blend Until Smooth
Blend until smooth and creamy, adjusting seasoning to taste.

Transfer to a bowl and serve with pita crisps.
Pickled Vegetables

Pickle the Vegetables
Place the sliced vegetables in a clean jar and pour the hot brine over them. Let it cool before sealing.

Refrigerate for at least 2 hours before serving for best flavor.

In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, and black pepper.

Blend until the mixture is smooth and creamy.

Pita Crisps

Preheat oven to 375°F (190°C).

Cut pita bread into triangles and place them on a baking sheet.
