Dressing Preparation

Make the Dressing
In a medium mixing bowl, whisk together the lemon juice, grated Pecorino Romano cheese, minced garlic, Dijon mustard, and Worcestershire sauce until well combined.

Slowly drizzle in the olive oil while continuously whisking, until the dressing is smooth and emulsified. Season with salt and black pepper to taste.
Crouton Preparation

Prepare the Croutons
Preheat your oven to 375°F (190°C). In a large bowl, toss the cubed bread with olive oil, dried oregano, garlic powder, and salt until evenly coated.

Spread the bread cubes on a baking sheet in a single layer. Bake for 12-15 minutes, or until golden brown and crispy, stirring halfway through. Remove from oven and let cool.
Salad Assembly

Assemble the Salad
In a large salad bowl, add the chopped romaine hearts. Drizzle the lemon-pecorino dressing over the romaine and toss until evenly coated.

Top the salad with shaved Parmigiano-Reggiano cheese and the herb croutons. Serve immediately.
