Guacamole

    Prepare the Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash the Avocados

    Use a fork or a potato masher to mash the avocado to your desired consistency.

    Mix in Ingredients

    Add lime juice, chopped red onion, minced jalapeño, cilantro, salt, and black pepper to the mashed avocado. Mix thoroughly.

    Taste and Adjust

    Taste the guacamole and adjust seasoning if necessary. Add more salt, lime juice, or pepper to your liking.

    Combine Ingredients

    In a bowl, combine the diced tomatoes, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, salt, and black pepper.

    Stir the salsa until all ingredients are well incorporated.

    Taste and Adjust

    Taste the salsa and adjust the seasoning if necessary. Add more lime juice, salt, or pepper to suit your preference.

    Stack the corn tortillas and cut them into triangles or desired shapes.

    In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Tortilla Chips

    Carefully add the tortilla triangles to the hot oil, frying in batches until they are golden brown and crispy, about 2-3 minutes per batch.

    Once fried, use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
