Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Dredge Calamari
Coat each calamari ring in the flour mixture, shaking off any excess.

Heat Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
In a medium mixing bowl, combine sweet corn kernels, diced red bell pepper, diced onion, apple cider vinegar, sugar, salt, and black pepper.

Stir the mixture well until all ingredients are thoroughly incorporated.

Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
Spicy Aïoli

In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, and lemon juice.

Add salt to taste and mix until smooth and well combined.

Refrigerate for at least 15 minutes before serving to enhance flavors.
