Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with flour, tapping out the excess flour. This will help the cakes release easily after baking.

Mixing Ingredients

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or in the microwave in short bursts, stirring until smooth.

  2. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg and sugar mixture. Add the vanilla extract and a pinch of salt. Stir until well combined.

  4. 6

    Add Flour

Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be set while the center remains soft.

  3. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and let it sit for a few seconds before lifting it off, allowing the molten center to ooze out.

Serving Suggestions

  1. 10

    Garnish

Dust with powdered sugar and serve warm with a scoop of vanilla ice cream on the side.
