Prepare the Ingredients
Rinse and drain the canned chickpeas thoroughly and set aside. Chop the olive oil-cured tomatoes into bite-sized pieces. Peel and finely chop the red onion. Roughly chop the fresh parsley. Pit and slice the Kalamata olives if they are whole.

Combine the Salad
In a large mixing bowl, combine the chickpeas, chopped tomatoes, red onion, parsley, and olives. Mix well to ensure an even distribution of ingredients.

Make the Lemon Dressing
In a small bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil, salt, and pepper to taste. Adjust the seasoning based on preference.

Dress the Salad
Pour the lemon dressing over the salad mixture in the large bowl. Toss gently to combine, making sure all ingredients are well-coated with the dressing.
