Beef Short Ribs

Method

Braised Beef Short Ribs

    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Season the beef short ribs with salt and black pepper.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add minced garlic and cook for 1 minute. Then add the chopped shallots and sauté until translucent, about 3 minutes.

    Deglaze and Braise

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Add beef broth, thyme, and bay leaves. Return the short ribs to the pot, ensuring they are submerged in the liquid. Cover the pot and transfer to the oven.

    Braise

    Braise in the oven for about 3 hours, or until the meat is tender and falling off the bone.

Mushroom Purée

    Sauté Shallots

    In a skillet, melt butter over medium heat. Add chopped shallots and cook until soft and translucent, about 3-4 minutes.

    Cook Mushrooms

    Add the mixed mushrooms to the skillet and sauté until they are browned and tender, about 8-10 minutes.

    Blend the Purée

    Transfer the mushroom mixture to a blender or food processor. Add heavy cream and blend until smooth. Season with salt and black pepper to taste.

Shallot-Herb Crust

    Mix the Crust

    In a bowl, combine chopped parsley, chives, bread crumbs, olive oil, salt, and black pepper. Mix until well combined.

    Crust the Ribs

    Once the ribs are done braising, remove them from the pot and place them on a baking sheet. Sprinkle the shallot-herb crust over the top of the ribs.

    Broil

    Place the baking sheet under the broiler for 3-5 minutes, or until the crust is golden and crispy.
