    In a small skillet over medium heat, toast the coriander seeds until fragrant, about 2-3 minutes. Be careful not to burn them.

    In a large glass jar, combine the toasted coriander seeds, dried marjoram, whole cloves, and neutral spirit. Stir gently to mix.

    Add Peels

    Add the orange peel and lemon peel to the jar. Ensure they are fully submerged in the spirit.

Infusion

    Infuse the Mixture

    Seal the jar tightly and place it in a cool, dark place. Let it infuse for 2 weeks, shaking the jar gently every few days to help the flavors meld.

    Strain the Mixture

    After 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean bottle, discarding solids.

Finishing Touch

    Sweeten the Amaro

    Add the simple syrup to the strained liquid, adjusting sweetness to taste. Mix well to combine.

    Bottle and Store

    Pour the final Amaro Montenegro into a clean bottle, seal tightly, and store in the refrigerator for up to 6 months.
