Tart Crust

Prepare the Tart Crust
In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Melt the unsalted butter in a saucepan until browned, then let cool slightly before adding it to the flour mixture. Mix until crumbly, then add ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Pear Filling
In a large bowl, toss together the sliced pears, granulated sugar, lemon juice, ground cinnamon, and vanilla extract. Let sit for 10 minutes to allow the pears to release some juices.

Fill the Tart
Arrange the pear mixture evenly over the cooled tart crust.
Brown Butter Ice Cream

Make the Brown Butter
In a saucepan, melt the unsalted butter over medium heat. Cook until it turns a deep golden brown, stirring frequently. Remove from heat and let cool slightly.

Prepare Ice Cream Base
In another saucepan, combine heavy cream, whole milk, and granulated sugar. Heat until sugar dissolves. In a bowl, whisk egg yolks, then temper with a bit of the warm cream mixture. Gradually whisk in the remaining cream mixture. Cook over low heat until thickened, then remove from heat and stir in the brown butter and vanilla extract. Chill in the fridge for at least 2 hours.

Churn the Ice Cream
Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions. Freeze until firm.

Prepare Oat Crumble
In a bowl, mix rolled oats, all-purpose flour, brown sugar, melted butter, and salt until combined. Spread the mixture on a baking sheet and bake at 350°F (175°C) for 15-20 minutes until golden and crispy. Allow to cool.
Assembly

Assemble the Tart
Once the tart is filled with pears, sprinkle the oat crumble over the top. Bake the tart at 350°F (175°C) for an additional 25-30 minutes, or until the topping is golden brown and the pears are tender.

Serve warm with a scoop of brown butter ice cream and drizzle with dulce de leche.
