Method
Preparation of Oysters
Select and Clean Oysters
Choose 12 pieces each of two different varieties of fresh oysters. Rinse them under cold water to remove any grit or debris.
Shuck the Oysters
Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge and twisting to open. Remove the top shell and place the oysters on a serving platter.
Cocktail Sauce Preparation
Combine Ingredients
In a mixing bowl, combine 1 cup of ketchup, 2 tablespoons of horseradish, 1 tablespoon of lemon juice, 1 teaspoon of Worcestershire sauce, and salt to taste. Mix well until fully combined.
Chill and Serve
Cover the cocktail sauce and refrigerate until ready to serve with the oysters.
Mignonette Sauce Preparation
Prepare Mignonette
In a small bowl, mix together 1 cup of red wine vinegar, finely chopped shallots, and 1 teaspoon of black pepper. Stir to combine.
Chill
Allow the mignonette sauce to sit for at least 15 minutes for flavors to meld, then refrigerate until ready to serve.
Serving
Arrange the Dish
On a large serving platter, arrange the shucked oysters with the cocktail sauce and mignonette sauce on the side. Add lemon wedges and serve with a loaf of fresh bread.

Serve immediately and enjoy the fresh oysters with your choice of dipping sauces.
