Prepare the Spinach
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly.

Mix the Croquette Base
In a mixing bowl, combine the cooked spinach and garlic mixture with 1 cup of Gruyère cheese, 1 cup of flour, 2 beaten eggs, and 0.5 cups of milk. Season with 1 teaspoon of salt and 0.5 teaspoons of black pepper. Mix until well combined.

Form the Croquettes
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter. Roll each formed croquette in breadcrumbs to coat evenly.

Fry the Croquettes
In a large frying pan, heat enough olive oil for frying. Once hot, carefully add the croquettes in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy on all sides, about 3-4 minutes. Drain on paper towels.

Make the Aïoli
Once the roasted garlic has cooled, squeeze the cloves out of their skins into a mixing bowl. Add 1 cup of mayonnaise, 2 tablespoons of lemon juice, and 0.5 cups of olive oil. Season with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper. Whisk until smooth and creamy.
