Bread Dough

Method

Preparing the Dough

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (110°F to 115°F) and sugar. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.

  3. 3

    Mix Dough

Once the yeast is frothy, add it to the flour mixture along with the olive oil and chopped rosemary. Mix until a shaggy dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

  5. 5

    Incorporate Raisins

Flatten the dough slightly, sprinkle the raisins over the top, and fold the dough over to incorporate them evenly. Knead for an additional minute.

  6. 6

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shaping and Baking

  1. 7

    Shape the Dough

Once the dough has risen, punch it down gently to release air. Turn it out onto a floured surface and shape it into a loaf.

  2. 8

    Prepare for Second Rise

Place the shaped loaf into a greased 9x5 inch loaf pan. Cover with the damp cloth and let it rise again for about 30-45 minutes until it has risen above the edge of the pan.

  3. 9

    Preheat the Oven

Preheat your oven to 375°F (190°C) while the dough is rising for the second time.

  4. 10

    Bake the Bread

Once the dough has risen, bake in the preheated oven for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

  5. 11

    Cool the Bread

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
