Preparation

    Harvest and Prepare Grapes

    Select ripe Garnacha, Tempranillo, and Monastrell grapes from the vineyards of Priorat, La Mancha, Valencia, Aragon, and Catalonia. Remove stems and leaves, then wash the grapes thoroughly.

    Crush the Grapes

    Using a grape crusher or your hands, crush the grapes in a large container. This will release the juice and pulp needed for fermentation.

Fermentation

    Add Water and Sugar

    Add 1 liter of water and 1 cup of sugar to the crushed grape mixture. Stir well to dissolve the sugar completely.

    Inoculate with Yeast

    Sprinkle 1 tsp of yeast over the mixture. Stir gently to incorporate the yeast into the grape juice.

    Ferment the Mixture

    Cover the container with a clean cloth and let the mixture ferment at room temperature for about 7-10 days. Stir daily to encourage fermentation.

Aging

    Press the Wine

    After fermentation, press the mixture to separate the liquid wine from the grape skins. Use a wine press or a fine mesh strainer.

    Aging with Oak Chips

    Transfer the pressed wine into clean, sanitized barrels or bottles, adding 1 cup of oak chips for aging. Seal tightly and store in a cool, dark place.

    Aging Period

    Allow the wine to age for at least 6 months to develop its full flavor profile. Taste periodically to check for desired taste.

Bottling

    Bottle the Wine

    After aging, carefully siphon the wine into sterilized bottles, leaving some space at the top. Seal with corks or caps.

    Label and Store

    Label the bottles with the date and type of wine. Store them upright in a cool, dark place for future enjoyment.
