Preparation of Potatoes

    Prepare the Potatoes

    Peel and dice the russet potatoes into bite-sized cubes. Rinse them under cold water and pat them dry with a clean towel.

    Fry the Potatoes

    In a large pot, heat olive oil over medium heat. Once hot, carefully add the potato cubes in batches to avoid overcrowding. Fry until golden brown and crispy, about 8-10 minutes per batch. Remove and drain on paper towels.

    Season the Potatoes

    While the potatoes are still hot, sprinkle them with salt, black pepper, and paprika. Toss to evenly coat.

Preparation of Spicy Tomato Sauce

    Cook the Sauce

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, smoked paprika, red pepper flakes, salt, and sugar. Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally until the sauce thickens.

    Finish the Sauce

    Remove from heat and stir in the chopped fresh parsley. Adjust seasoning to taste if needed.

Serving

    Plate the Dish

    Serve the crispy potatoes on a plate and generously drizzle the spicy tomato sauce over the top. You can also serve the sauce on the side for dipping.
