Mushroom Fricassée

Sauté the Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

Cook the Vegetables
Add the diced butternut squash and turnips to the skillet. Stir well, cover, and cook for about 8-10 minutes until they start to soften.

Add the Mushrooms
Stir in the Matsutake mushrooms and cook for another 5 minutes, stirring occasionally.

Add Broth and Seasoning
Pour in the vegetable broth, add salt, black pepper, and chopped thyme. Bring to a simmer and cook uncovered for about 15-20 minutes, or until the vegetables are tender.

Finish with Cheese
Remove from heat and stir in the grated Idiazabal cheese until melted and combined. Adjust seasoning if needed.
Sautéed Spinach

Prepare the Spinach
In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 minced garlic clove and sauté for about 30 seconds.

Sauté the Spinach
Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.

Season and Serve
Season with salt and black pepper to taste, then remove from heat.
