Shrub Preparation

    Wash and dice the ripe pears into small pieces, ensuring to remove any seeds and stems.

    Combine Ingredients

    In a medium saucepan, combine the diced pears, brown sugar, apple cider vinegar, water, grated ginger, cinnamon stick, and cloves.

    Cook the Mixture

    Heat the mixture over medium heat, stirring frequently until the sugar has dissolved completely. Allow it to simmer for about 10 minutes.

    Cool and Strain

    Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, strain the liquid through a fine mesh sieve into a clean jar or bottle, discarding the solids.

    Seal the jar or bottle and refrigerate the shrub base for at least 24 hours to allow flavors to meld.
