Preparation of Ice Cream Base

    Combine Dairy Ingredients

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are pale and frothy.

    Temper the Egg Yolks

    Slowly pour about a cup of the hot milk mixture into the egg yolks, whisking constantly to temper the yolks. This will prevent them from scrambling.

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Stir in the malted milk powder and vanilla extract.
