    Bring a large pot of water to a boil. Add the Oka Brand Dry Soba Noodles and cook according to package instructions, usually about 6-8 minutes, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    In a medium saucepan, combine the Dashi Stock, Soy Sauce, and Mirin. Bring to a gentle simmer over medium heat, stirring occasionally to combine the flavors. Continue to simmer for about 5 minutes.

    Finely chop the Green Onions and set aside. Cut the Nori sheet into thin strips. Prepare the Sesame Seeds and Shredded Daikon Radish for serving.
