Add Milk
Gradually add the milk to the roux while whisking continuously to avoid lumps. Cook for about 5 minutes until thickened.

Combine Ingredients
Stir in the finely chopped jamón, salt, black pepper, and nutmeg. Mix well and remove from heat.

Chill the Mixture
Transfer the mixture to a bowl, cover with plastic wrap directly on the surface, and refrigerate for at least 2 hours or until firm.

Shape the Croquettes
Once the mixture is firm, scoop out portions and roll them into small cylinders or balls.

Coat the Croquettes
Roll each croquette in flour, then dip in the beaten egg, and finally coat with breadcrumbs.

Fry the Croquettes
Heat vegetable oil in a deep frying pan over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Blend the Sauce
In a blender, combine the roasted red bell pepper, garlic, olive oil, red wine vinegar, cumin, paprika, and salt. Blend until smooth.

Taste the sauce and adjust the seasoning if necessary. Set aside until ready to serve.
