    Clean the Mussels

    Rinse the blue mussels under cold running water. Remove any beards (the fibrous threads) and scrub the shells with a brush to remove dirt and debris.

    Chop the Aromatics

    Finely chop the garlic and shallots. Roughly chop the fresh parsley, reserving a small amount for garnish.

    Prepare the Lemon

    Cut the lemon in half and squeeze the juice from one half. Slice the other half into wedges for serving.

    Sauté the Aromatics

    In a large pot or Dutch oven, heat the olive oil and 2 tablespoons of butter over medium heat. Add the chopped garlic and shallots, and sauté until they are translucent and fragrant, about 3-4 minutes.

    Increase the heat to medium-high. Add the cleaned blue mussels to the pot and stir to combine with the aromatics.

    Deglaze with Wine

    Pour in the white wine and add the salt and black pepper. Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until they have opened up.

    Finish the Sauce

    Once the mussels are opened, remove the pot from heat. Stir in the remaining 2 tablespoons of butter and the lemon juice. Adjust seasoning if necessary.

    Ladle the mussels and broth into bowls. Garnish with the chopped parsley and serve with lemon wedges on the side.
