Preparation of Marinade

Make the Marinade
In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, chili powder, salt, and black pepper until well combined.

Preheat the Grill
Preheat your grill to medium-high heat (about 400-450°F).

Grill the Chicken and Steak
Remove the chicken and steak from the marinade, allowing excess marinade to drip off. Grill chicken for about 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Grill steak for about 4-5 minutes per side for medium-rare, adjusting time for desired doneness. Remove from grill and let rest for 5 minutes before slicing.

Sautéing the Vegetables

Prepare the Peppers and Onions
While the meats are grilling, slice the bell peppers and onion into thin strips.

Sauté the Vegetables
In a large skillet, add a bit of olive oil over medium heat. Add the sliced bell peppers and onion, and sauté for about 5-7 minutes until they are soft and slightly caramelized.
Assembling the Fajitas

Warm the Tortillas
In a dry skillet or on the grill, warm the flour tortillas for about 30 seconds on each side until pliable.

Serve
Slice the grilled chicken and steak into strips. Serve the meats and sautéed vegetables on a platter with warm tortillas, sour cream, guacamole, shredded cheese, and chopped cilantro on the side. Allow everyone to assemble their own fajitas.
