    Clean the Clams

    Place the fresh clams in a bowl of cold water and let them soak for about 30 minutes to help remove any sand or grit. Rinse them thoroughly under cold running water.

    In a large pot, combine water, sea salt, white vinegar, garlic cloves (smashed), bay leaves, and black peppercorns. Bring the mixture to a boil, stirring until the salt is completely dissolved.

    Once the brine is boiling, add the cleaned clams to the pot. Cover the pot and let them cook for about 5–7 minutes, or until the clams open up. Discard any clams that do not open.

    Remove the pot from heat and let the clams sit in the brine for an additional 10 minutes to absorb the flavors. Add lemon slices to the pot for added flavor.
