    Prepare the Ingredients

    Slice the chorizo into thin rounds, approximately 1/4 inch thick. Cut the Manchego cheese into similar-sized slices. Rinse the shishito peppers under cold water and pat them dry. Preheat a skillet over medium heat.

    Cook the Chorizo and Peppers

    In the preheated skillet, add the sliced chorizo and cook for about 3-4 minutes until it starts to brown and release its oil. Add the shishito peppers to the skillet and sauté for an additional 5-7 minutes until they are blistered and tender.

    Prepare the Baguette

    While the chorizo and peppers are cooking, slice the baguette into thin slices, about 1/2 inch thick. You can toast these slices in a separate skillet or in the oven if desired for a crunchy texture.

    Assemble the Dish

    On each slice of baguette, spread a thin layer of Dijon mustard, then top with a slice of Manchego cheese, followed by a piece of cooked chorizo, and a shishito pepper.
