Prepare the Chorizo
Slice the chorizo sausage into bite-sized pieces.

Sauté Aromatics
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Add Chorizo
Add the sliced chorizo to the skillet and cook until it starts to brown, about 5-7 minutes.

Add Wine and Seasoning
Pour in the red wine and add the bay leaf, paprika, salt, and black pepper. Stir to combine.

Bring the mixture to a simmer and reduce heat to low. Let it cook uncovered for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
