Preparation

    Prepare the Wine Base

    In a large fermentation vessel, pour in the Charter Oak wine. Make sure the vessel is sanitized to avoid contamination.

    Pour 500 ml of water into the fermentation vessel containing the wine. This will help dilute the concentration of the wine and prepare it for fermentation.

    Add 100 grams of sugar to the mixture. Stir well until the sugar is fully dissolved in the liquid.

    Add Yeast

    Sprinkle 5 grams of yeast over the surface of the liquid. Allow it to sit for 10 minutes before stirring gently to incorporate the yeast into the mixture.

    Prepare French Oak Chips

    Soak 50 grams of French Oak chips in boiling water for 30 minutes. This will help to release the flavors and aromas from the oak.

Fermentation

    Combine Oak Chips

    After soaking, drain the French Oak chips and add them to the fermentation vessel. Stir gently to mix them with the wine mixture.

    Cover the fermentation vessel with an airlock or a clean cloth secured with a rubber band to allow gases to escape while preventing contaminants from entering.

    Place the vessel in a dark, cool area (around 20-25°C) for 1 to 2 weeks. Check daily for bubbles in the airlock, which indicates fermentation is active.

Bottling

    Clarify the Wine

    After fermentation is complete, siphon the wine off the sediment into clean bottles, leaving the sediment behind. This might take a few hours.

    Bottle the Wine

    Fill clean bottles with the clarified wine, leaving about an inch of space at the top. Seal the bottles tightly with corks.

    Aging

    Store the bottled wine in a cool, dark place for at least 3 months to allow the flavors to develop and mature.
