Method

Preparing the Anchovies

    Clean the Anchovies

    Rinse the fresh anchovies under cold running water to remove any debris. Remove the heads and guts, and gently open the anchovies to flatten them. Place them in a bowl of ice water for 10 minutes to firm up.

    Soak the Anchovies

    In a separate bowl, mix equal parts of water and white wine vinegar. Soak the cleaned anchovies in this mixture for 30 minutes to remove any strong fishy flavor.

Making the Garlic Vinaigrette

    Prepare the Garlic

    Peel and finely mince the garlic cloves.

    Mix the Vinaigrette

    In a bowl, whisk together the minced garlic, extra virgin olive oil, white wine vinegar, Dijon mustard, salt, and black pepper until well combined.

Assembling the Dish

    Drain the soaked anchovies and pat them dry with paper towels. Arrange them neatly on a serving platter.
