Preparation of Herbal Infusion

Create the Herbal Infusion
In a small saucepan, combine dried chamomile flowers, dried orange peel, dried gentian root, cinnamon stick, and star anise with 2 cups of water. Bring to a boil over medium heat, then reduce to low and let simmer for 10 minutes.

Strain the Infusion
After simmering, remove the saucepan from heat and strain the mixture through a fine mesh strainer into a bowl, discarding the solids. Allow the liquid to cool completely.
Mixing the Drink

Combine Ingredients
In a large glass or cocktail shaker, combine 1 cup of cold brew coffee, 1 cup of tonic water, and 1 tablespoon of honey or agave syrup. Mix well until the honey is fully dissolved.

Add the Herbal Infusion
Once the herbal infusion is cool, add 1/2 cup of the strained infusion to the coffee and tonic mixture. Stir gently to combine.
Serving the Cocktail

Garnish and Serve
Pour the drink into a glass filled with ice. Garnish with a fresh orange slice and mint leaves. Serve immediately and enjoy your non-alcoholic Amaro Falso!
