Sweeteners and Flavorings

Method

Preparation of Base

  1. 1

    Combine Neutral Spirit and Water

In a large glass container, combine 750 ml of neutral grain spirit with 250 ml of water. Stir gently to mix.

Infusing Flavors

  1. 2

    Add Herbs and Spices

Add the dried orange peel, chamomile flowers, sage, thyme, rosemary, cinnamon stick, cardamom pods, and cloves to the spirit mixture. Stir gently to combine.

  2. 3

    Let Infuse

Cover the container with a lid or plastic wrap and let it sit in a cool, dark place for about 14 days. Shake the container gently every few days to help with the infusion process.

Sweetening the Mixture

  1. 4

    Prepare Sweetener

After 14 days of infusion, strain the mixture through a fine mesh strainer or cheesecloth to remove the solids.

  2. 5

    Add Sugar, Honey, and Vanilla

In a saucepan, combine the strained liquid with 300 g of sugar, 50 g of honey, and 1 tsp of vanilla extract. Heat gently, stirring until the sugar and honey are fully dissolved.

Finalizing the Amaro

  1. 6

    Cool and Bottle

Once the sweetener is fully dissolved, allow the mixture to cool to room temperature. Transfer the Amaro Averna into clean bottles and seal tightly.

  2. 7

    Store

Store the bottles in a cool, dark place. Let the flavors meld for another week before serving for the best results.
