Pork Belly Preparation

    Prepare the Pork Belly

    Preheat your slow cooker. Rinse the pork belly under cold water and pat it dry with paper towels. Score the skin in a crosshatch pattern, being careful not to cut into the meat.

    Season the Pork Belly

    Rub the pork belly with salt, black pepper, garlic powder, and onion powder evenly over the entire surface, including the scored skin.

    Add to Slow Cooker

    Place the seasoned pork belly in the slow cooker. Pour the apple cider vinegar and chicken broth around the pork belly. Add fresh thyme on top.

    Cook the Pork Belly

    Cover the slow cooker and cook on low for 8 hours or until the pork is tender.

Apple Sauce Preparation

    Cook the Apples

    While the pork belly is cooking, combine the sliced apples, sugar, cinnamon, lemon juice, and water in a saucepan over medium heat.

    Simmer and Mash

    Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes or until the apples are soft. Mash the apples with a fork or potato masher to your desired consistency.

    Serve

    Once the pork belly is done cooking, remove it from the slow cooker and let it rest for 10 minutes. Slice the pork belly and serve it with the apple sauce on the side.
