Prepare the Fruit
Cut fresh pineapple into small chunks and set aside.

Chill the Glass
Place a cocktail glass in the freezer or fill it with ice water to chill while preparing the drink.
Mixing the Cocktail

Combine Ingredients
In a shaker, combine 2 oz of Aperol, 4 oz of pineapple juice, and 1 oz of cherry juice.

Add Ice
Add 1 cup of ice cubes to the shaker and seal it tightly.

Shake Well
Shake vigorously for about 15-20 seconds until well chilled.
Serving the Cocktail

Strain and Serve
Remove the cocktail glass from the freezer or ice water. Strain the mixture from the shaker into the chilled glass.

Garnish
Add fresh pineapple chunks and maraschino cherries on top for garnish. Place mint leaves on top for added aroma and flavor.
