Calamari Preparation

Prepare the Calamari
Rinse the fresh calamari tubes under cold water and pat them dry with paper towels. Slice the tubes into rings about 1/2 inch thick.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure even distribution.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring each piece is well-coated. Shake off any excess flour.

Heat the Oil
In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Spicy Aioli Preparation

Make the Aioli
In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, and Sriracha sauce. Mix thoroughly until all ingredients are well blended.

Season the Aioli
Add salt to the aioli to taste. Adjust the amount of Sriracha for desired spice level.

Chill the Aioli
Refrigerate the spicy aioli for at least 30 minutes to allow the flavors to meld.
