Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This ensures the cakes will rise properly.
- 2
Prepare Ramekins
Grease four 6-ounce ramekins with butter and lightly dust with flour to prevent sticking. Place them on a baking sheet for easy handling.
- 3
Melt Butter and Chocolate
In a medium saucepan over low heat, combine the unsalted butter and semisweet chocolate chips. Stir continuously until melted and smooth. Remove from heat and let cool slightly.
- 4
Whisk Eggs and Sugar
In a mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly. This will prevent the eggs from cooking. Add the vanilla extract and salt, and stir to combine.
- 6
Add Flour
Gently fold in the all-purpose flour until just combined. Be careful not to overmix.
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake the Lava Cakes
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
- 9
Rest and Serve
Let the cakes rest for 1 minute after removing from the oven. Carefully run a knife around the edges and invert onto plates. Serve immediately with a scoop of vanilla ice cream.
