    In a bowl, combine coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and salt. Mix well until all ingredients are combined.

    Cut the boneless chicken breast into bite-sized cubes. Add the chicken to the marinade, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.

    In a bowl, combine thinly sliced cucumber, red onion, rice vinegar, sugar, and salt. Toss well to combine and let it sit for 10 minutes to allow flavors to meld. Before serving, sprinkle with fresh chopped cilantro.
