Prepare the Beef
Preheat your oven to 400°F (200°C). Season the beef tenderloin with salt, black pepper, and chopped fresh rosemary. Rub the olive oil all over the tenderloin to ensure even cooking.

Sear the Beef
In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the seasoned beef tenderloin and sear on all sides until browned, about 2-3 minutes per side.

Roast the Beef
Transfer the seared beef tenderloin to a baking dish. Add whole garlic cloves around the beef, then roast in the preheated oven for 20-25 minutes for medium-rare, or until desired doneness is reached. Use a meat thermometer to check the internal temperature (135°F for medium-rare).

Rest the Beef
Once cooked, remove the beef from the oven and let it rest for 10 minutes before slicing.
