Cooking Pasta

    Boil the Pasta

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook the Pasta

    Add 2 cups of fusilli pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Rinse

    Once cooked, drain the pasta and rinse under cold water to stop the cooking process. Set aside.

Preparing Vegetables

    Chop the Vegetables

    Dice 1 medium zucchini and halve 1 cup of cherry tomatoes. Mince 3 cloves of garlic.

    Sauté the Vegetables

    In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

    Add Zucchini and Tomatoes

    Add the diced zucchini and halved cherry tomatoes to the skillet. Sauté for about 5 minutes until the vegetables are tender.

    Add Spinach

    Stir in 2 cups of spinach and cook until wilted, about 2-3 minutes.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained fusilli pasta and 1 cup of cooked chicken breast (diced) to the skillet with the vegetables.

    Add Pesto Sauce

    Pour in 1 cup of pesto sauce and mix well until all ingredients are evenly coated.

    Add Cheese and Season

    Sprinkle 1 cup of grated Parmesan cheese and 1 tsp of black pepper over the pasta mixture. Stir until well combined.
