    Prepare the Beef

    Rinse the flank steak under cold water and pat it dry with paper towels.

    Sear the Beef

    In a large pot, heat the olive oil over medium-high heat. Add the flank steak and sear it on both sides until browned, about 4-5 minutes per side.

    Add Vegetables

    Remove the steak from the pot and set aside. In the same pot, add the sliced onion and bell pepper. Sauté for about 3-4 minutes until they are softened.

    Add Garlic and Spices

    Stir in the minced garlic, cumin, oregano, salt, and black pepper. Cook for another minute until fragrant.

    Combine Ingredients

    Return the seared beef to the pot. Add the tomato sauce, beef broth, and bay leaves. Stir to combine all ingredients.

    Simmer

    Cover the pot and reduce the heat to low. Let it simmer for about 2-3 hours, or until the beef is tender and easily shreds with a fork.

    Shred the Beef

    Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef back to the pot.

    Add Olives and Capers

    Stir in the sliced green olives and capers. Allow everything to heat through for an additional 10 minutes.

    Garnish and Serve

    Remove the bay leaves. Serve the Ropa Vieja hot, garnished with fresh chopped cilantro.
