    Prepare the Plantains

    Peel the sweet plantains and cut them diagonally into 1/2-inch thick slices. In a large skillet, heat oil over medium heat and fry the plantain slices until golden brown on both sides. Remove from the skillet and set aside.

    Cook the Ground Beef

    In the same skillet, add more olive oil if necessary, and sauté the diced onion, bell pepper, and minced garlic until softened. Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat.

    Add Seasoning

    Stir in the tomato sauce, cumin, salt, and black pepper. Let the mixture simmer for about 5-7 minutes until heated through.

    Assemble the Pastelon

    Preheat your oven to 350°F (175°C). In a baking dish, layer half of the fried plantains at the bottom. Next, add half of the ground beef mixture on top, followed by one cup of Swiss cheese. Repeat the layers with the remaining plantains, beef, and top with the remaining cheese.

    Add Eggs

    In a bowl, beat the eggs and pour them evenly over the top layer of cheese. This will help bind the layers together.

    Bake

    Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the cheese is melted and bubbly, and the top is golden.

    Serve

    Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy your delicious Pastelon!
