    Prepare the Marinade

    In a blender, combine the garlic cloves, lemon juice, olive oil, salt, black pepper, oregano, and cumin. Blend until smooth to create a marinade.

    Marinate the Pork Shoulder

    Place the pork shoulder in a large resealable plastic bag or a bowl. Pour the marinade over the pork, ensuring it's well coated. Add the bay leaves to the bag or bowl. Seal the bag or cover the bowl and refrigerate for at least 4 hours or overnight for best results.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Prepare for Roasting

    Remove the pork from the marinade and let any excess marinade drip off. Place the pork shoulder in a roasting pan. You can add some chopped onions or vegetables around it if desired.

    Roast the Pork

    Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for about 3 to 4 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

    Crisp the Skin

    Remove the foil during the last 30 minutes of roasting to allow the skin to crisp up. If the skin isn’t browning enough, you can broil it for a few minutes, watching closely to avoid burning.

    Rest and Serve

    Once done, remove the pork from the oven and let it rest for at least 20 minutes before slicing. Serve with your choice of sides.
