    Mixing the Dough

    In a large mixing bowl, dissolve the fresh yeast in warm water. Add the all-purpose flour and salt, and mix until a sticky dough forms.

    Kneading

    Transfer the dough to a floured surface and knead for about 10 minutes until it becomes smooth and elastic.

    First Rising

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

    Shaping the Bread

    Once risen, punch down the dough to release air. Divide it into equal portions and shape them into flat rounds, about 1 cm thick.

    Preheating the Oven

    Preheat your oven to 220°C (428°F). If you have a pizza stone, place it in the oven to heat as well.

    Baking

    Brush each flat bread with extra virgin olive oil and sprinkle with grated Pecorino cheese. Bake in the preheated oven for 15-20 minutes or until golden brown.

    Remove the flat bread from the oven and let it cool slightly on a wire rack before serving.
