Cooking Fregola
Prepare the Fregola
In a pot, bring the water and salt to a boil. Add the fregola sarda and reduce heat to a simmer. Cook for about 12-15 minutes until al dente. Drain and set aside.
Cooking Seafood
Sauté the Seafood
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Then, add squid, shrimp, and mussels. Cook for about 5-7 minutes until the seafood is cooked through.
Add White Wine
Pour in the white wine and cook for another 2-3 minutes, allowing the alcohol to evaporate.
Making Squid Ink Sauce
Prepare Squid Ink Sauce
In a small saucepan, combine squid ink and stock. Simmer for 5 minutes, then stir in the heavy cream and continue to cook until slightly thickened.
Combining the Dish
Combine Ingredients
In the skillet with the seafood, add the cooked fregola, lemon zest, and orange zest. Stir gently to combine all ingredients and heat through.
Serve the Dish
Serve the fregola and seafood mixture topped with squid ink sauce.
