Gnocchi Preparation

Cook Potatoes
Boil the potatoes in salted water until tender. Drain and let them cool slightly.

Make Dough
Peel the potatoes and mash them until smooth. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.

Shape Gnocchi
Divide the dough into small portions and roll each into a long rope. Cut into bite-sized pieces and shape with a fork.

Cook Gnocchi
Bring a pot of salted water to a boil. Drop in the gnocchi and cook until they float to the surface. Remove with a slotted spoon.
Pecorino Sardo Sauce Preparation

Prepare Sauce
In a saucepan over medium heat, combine the heavy cream and olive oil. Stir in grated Pecorino Sardo cheese until melted.

Add black pepper and chopped parsley to the sauce. Stir until well combined.
Serving

Toss the cooked gnocchi with the Pecorino Sardo sauce. Serve hot, garnished with additional parsley if desired.
